Bachelor's Cookbook
There are two schools of thought concerning bachelors
and cooking. The first is that bachelors don't cook; the second is that they
shouldn't.
I subscribe to neither of these. Bachelors do cook, in the technical sense of the word. That is, they take edible material and apply heat to it in some manner. This makes it either more edible or less tasty, usually the latter.
The refutation to the second school of thought is the fact that I have been
cooking for myself for over 30 years and I am still alive and in (reasonably)
good health. This is due, in part to what I call the "Borgia Effect"; that is,
I have become immune to my own cooking. Here, then, are some of my own favorite
recipes. (WARNING!: Kids. DO NOT try this at home!)
Overnight Hummus
Take one container of your favorite flavor hummus and open.
Leave on counter overnight. Two days may be necessary during cold weather.
I discovered this recipe purely by accident, and I find that it gives ordinary
hummus a 'je ne sais quois" which means something in French that I will look
up before this goes to the printer.
Overnight Hummus can be used alone or as an ingredient in other recipes, such
as:
Scrambled Eggs ala
Overnight Hummus
Melt butter in frying pan, skillet or old aluminum pot pie container. Turn on the heat; NOW melt the butter. Add onions, beer nuts or whatever and saute (another French word to look up). In a separate bowl or the hummus container add the eggs and flat beer. For a smoother dish, break the eggs first. When the onions or whatever are sauteed (don't ask me) add the egg mixture and stir until it is a big congealed mess. Serve with toast (recipe next week) or whatever is edible and handy.
